Today is a rest day, no riding. Everyone is catching up on laundry and shopping in Dillon for shampoos and what-have-you. I’ll be going food shopping at 2:00 pm because I have cooking duty with Clint tonight and tomorrow morning. Since we’re both Polish, we’re going to make pierogi, kielbasa, sauerkraut, and garlic sautéed broccolini for dinner. Hopefully we’ll find some jelly filled donuts for desert. Oh, yea, also some gnocci with pesto for our gluten-free person.

This morning, Richard again made a large breakfast of eggs, bacon, hash browns and pancakes for everyone. Stephanie, Suzanne and I did all the clean-up because we felt a tiny bit guilty for sleeping in our cabin. Bwahahaha!

After breakfast, one of the college riders, Darrin, left. I’m not exactly sure why he joined us but honestly, I’m glad he’s gone. He was one of the vegetarians who made it very clear that his way of eating was superior to everyone else’s – even though he freely munched on chips, cookies, pop tarts and all sorts of processed junk in between meals. Ugh. We still have Clint, Jada, and Lucas from the college group.

Okay, short blog today. Need to post the other missing blog days and then try to do some actually resting before shopping and cooking. Am very much appreciating electricity and access to wifi!

Update after dinner … the Polish dinner by Clint and Therese was a success! Instead of broccolini, I made pan fried Brussel sprouts with sea salt, ground pepper and lemon zest. We bought cookies for dessert because we couldn’t find any jelly filled donuts. But then, we learned that it was Steve’s 65th birthday tomorrow. Tomorrow’s cooks bought him cheesecake to celebrate but we couldn’t fit the cheesecakes in our coolers to keep them cold overnight. So we celebrated his birthday tonight instead. A very nice day and evening!

The group as of today, from L to R: Clint, Suzanne, Stephanie, Lucas, Therese, Doug, Steve, Esther, Richard, Mark, Jada, Dave, Adrianne.
